Rosemary Garlic Bread Bowls

* 1 1/4 cups very warm water

* 1 packet active dry yeast (2 1/4 tsp)

* 1 Tbsp sugar

* 3 cups flour

* 1 1/2 tsp salt

* 2 Tbsp olive oil

* 1 egg white

* 1 Sprig of rosemary

* 1 1/2 tbsp melted butter

* 1/2 tbsp minced garlic

Yield: 3 bowls



* Pour the very warm water into a kitchen aid mixer bowl. Add the yeast and sugar, let sit for 10 minutes (will create a foam on top). Be sure it’s not too hot or too cold or it will kill your yeast.


* Add the dough hook attatchment to the mixer. Turn the mixer on low, then slowly add in the flour and salt. Chop 1/2 sprig of Rosemary and add into olive oil. Add the olive oil and keep mixing until the dough comes together in a ball.


* Place dough in a large greased bowl. Cover with damp towel and let rise for one hour (or until it doubles in size).


* Divide the dough into 3 pieces. Roll each piece until it is a smooth ball (be sure it is spherical not flat). Pull part of the top of the bread down on all sides and bring it together at the bottom so the ball is smooth and perfectly round. Place each ball onto a baking sheet and loosely cover with parchment or wax paper. Let rise for 30 minutes.


* Preheat the oven to 400 degrees. Brush egg white on each ball of dough. Bake for about 25 minutes or until gold (not brown).


* Melt butter and mix remainder of rosemary and the minced garlic in. Brush on top of bowls.


* Once cool use a knife to cut a piece from the top and remove as much of the filling as you would like to create the bread bowl. Fill with your choice of soup. Bon appetite.
